The Best Lactation Cookies

I don't know if they work - but YUM...and my husband loved them, too (and he was not lactating). The oats + brewer's yeast + flaxseed is what makes them "lactation friendly." I had these on-hand basically 24/7. Bonus - they freeze well!



Ingredients

  • 3 cups oats

  • 1 1/2 cups flour

  • 5 tablespoons brewers yeast (I like this one)

  • 3 tablespoons ground flaxseed (I like this one)

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon ground cinnamon

  • 3/4 cup butter

  • 4 tablespoons coconut oil

  • 1 1/2 cups sugar

  • 1 large egg

  • 2 teaspoons vanilla extract

  • 1 1/2 cups chocolate chips/chunks

  • feel free to add: coconut flakes, chopped nuts


Instructions

  • Preheat the oven the 350 degrees

  • In the bowl of your electric mixer, beat the butter and coconut oil on medium speed until creamy. Add in the sugar and beat on medium to high speed until fluffy. Add in the egg and vanilla.

  • Gradually add in the dry ingredients, beating on low speed until just combined and mixed. Stir in the chocolate chips (and any other add ins)

  • Scoop the dough into 1-inch balls and place on a baking sheet about 2 inches apart.

  • Bake for 10 to 14 minutes, or until the bottoms are just golden. Let cool completely before storing in a sealed container or Ziplock for the freezer
