Hawaiian Fried Rice with Chicken Apple Sausage 🍍

The sweet-savory 20-minute dinner your whole family will actually eat.

When dinner needs to be fast, fun, and not met with “ew,” this Hawaiian Fried Rice with Chicken Apple Sausage saves the day. It's got all the right things:✔️ Sweet pineapple✔️ Crispy rice✔️ Smoky-sweet chicken apple sausage✔️ Bonus: it uses up leftover rice!


This is one of those rare meals my twins AND my husband devour - no side dish required, no backup nuggets needed.

🛒 What You’ll Need

Main Ingredients:

  • 1 tbsp oil (avocado, sesame, or olive oil)

  • 1 package chicken apple sausage, sliced into coins (I love the one from Aidells or Trader Joe’s)

  • 2 cups cooked rice (left over rice works great too)

  • 1 cup frozen peas and carrots (or any veggie mix)

  • Shredded cabbage (optional)

  • 1/2 cup pineapple chunks (fresh, canned, or frozen)

  • 2 eggs, lightly beaten

  • Spices for Rices Asian seasoning (this seriously makes the dish)

  • Optional: chili flakes or sriracha for the grownups 🌶️


👩‍🍳 How to Make It

  1. Prep your ingredients. This recipe moves fast, slice that sausage and make sure your rice is ready to go.

  2. Cook the sausage. Heat 1 tbsp oil in a large skillet or wok over medium heat. Add sliced chicken apple sausage and cook until browned on both sides (about 4–5 minutes). Remove and set aside.

  3. Sauté the veggies. In the same pan, add a little more oil if needed. Toss in shredded cabbage and cook until slightly soft. Add frozen veggies and pineapple chunks. Stir-fry for 2–3 minutes.

  4. Scramble the eggs. Push everything to one side of the pan. Pour in the beaten eggs and scramble them on the other side. Once cooked, mix it all together.

  5. Add the rice + sausage. Add your cooked rice to the pan, breaking up any clumps. Return the sausage to the pan. Stir-fry everything together.

  6. Season it up. Top with Spices for Rices then toss everything until evenly coated and heated through. Taste and adjust with salt, pepper, or extra soy sauce.

  7. Serve hot and top with crunchy noodles, sriracha, or a squeeze of lime if you're feeling fancy.


🧠 Mom Hack

Make it ahead! This reheats beautifully and makes great lunch leftovers.


Kid tip:  Serve pineapple on the side if they prefer deconstructed meals. (We’ve all been there.)
