What We Are Eating This Week | Week of February 8, 2026

Some weeks I plan dinners by vibes. Some weeks I plan by what everyone will actually eat. This week was built around what I need to get out of my freezer/fridge before we head out of town, fast prep, and meals that can be easily tweaked for kids who suddenly “don’t like that anymore."



Dinner 1: Pesto Caprese Chicken Foldovers

Juicy seasoned chicken tucked into crispy foldover tortillas with melty mozzarella and fresh tomatoes. It tastes fancy but cooks fast and feels like a win on a busy night.


🛒 What You’ll Need

  • Ground chicken

  • Pesto

  • Shredded mozzarella

  • Grape tomatoes

  • Tortillas or flatbreads

  • Arugula

  • Olive oil

  • Salt and pepper


Quick Recipe

Season ground chicken with salt and pepper and pesto. Small onto a tortilla and cook on both sides. Stuff with tomatoes, mozzarella, and arugula.


Make It Kid-Friendly

  • Skip pesto inside their foldover and serve it on the side

  • Use plain chicken and cheese only

  • Cut into triangles for quesadilla vibes


Dinner 2: Fish Burritos with Chips and Guacamole

A lighter dinner that still feels fun, packed with flaky fish, simple toppings, and crunchy chips on the side.


🛒 What You’ll Need

  • White fish fillets (or breaded fish filets - we love Gortons!)

  • Taco seasoning

  • Flour tortillas

  • Shredded lettuce

  • Shredded cheese

  • Avocados

  • Tortilla chips


Quick Recipe

Season fish and pan-sear or bake until flaky. Break into chunks and serve in tortillas with lettuce, cheese, and guacamole.


Make It Kid-Friendly

  • Serve fish plain with cheese tortillas

  • Let kids build their own burrito

  • Fish and chips always works

  • Swap the fish for a chicken tender [this is what we will have to do]


Dinner 3: Sloppy Joes with Sweet Potato Fries and Broccoli

Classic comfort food with a slightly healthier twist, and a guaranteed crowd-pleaser when you need something familiar.


🛒 What You’ll Need

  • Ground beef or turkey

  • Sloppy Joe sauce

  • Hamburger buns

  • Sweet potatoes

  • Broccoli florets

  • Olive oil



Quick Recipe

Brown meat and stir in sauce. Roast sweet potato fries and broccoli at 425°F with olive oil and salt until crispy.


Dinner 4: Pizza Night

An easy reset meal that keeps everyone happy and requires minimal brain power from mom.


🛒 What You’ll Need

  • Pizza dough or crusts

  • Pizza sauce

  • Mozzarella cheese

  • Favorite toppings


Quick Recipe

Assemble pizzas and bake according to crust directions.



Dinner 5: Carnitas Tacos with Street Corn and Black Beans

Bold flavors for adults with simple sides that kids can mix and match. Perfect for Taco Tuesday energy any night of the week.


🛒 What You’ll Need

  • Pork carnitas

  • Corn

  • Mayo

  • Cotija or parmesan cheese

  • Black beans

  • Small tortillas


Quick Recipe

Heat carnitas until crispy. Warm beans. Mix corn with mayo and cheese and heat through. Assemble tacos.



Dinner 6: Chicken Parmesan Pasta with French Bread and Green Peas

A cozy, filling dinner that feels like comfort food but comes together quickly with shortcuts.


🛒 What You’ll Need

  • Breaded chicken cutlets

  • Marinara sauce

  • Pasta

  • Mozzarella or parmesan

  • Frozen green peas

  • French bread


Quick Recipe

Cook pasta and peas. Heat chicken and top with marinara and cheese. Toss pasta with sauce and serve together.
