Mexican Pizza Casserole
We embrace Taco Tuesday in our house and are always looking for new Mexican-themed dishes that aren't tacos. Bonus if I can prep them ahead of time to make for a faster dinner and clean up...enter the Mexican pizza casserole. It's a delicious and easy-to-make dish that combines spices and seasonings of Mexican cuisine layered in a casserole dish complete with your "pizza" crust (aka tortilla).
This is an easy meal to prep the night before and serve up the next day too.

Ingredients
1-1/2 pounds ground beef
1 envelope taco seasoning
3/4 cup water
1 can (16 ounces) refried beans
1/2 a jar of salsa
6-8 corn-flour tortillas (6 inches)
2 cups frozen corn (or 1 bag)
2 cups shredded cheddar cheese
Optional: Shredded lettuce, chopped tomatoes, cilantro and sour cream
Instructions:
1. Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning, water and salsa, . Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes.
2. Meanwhile, in a microwave-safe bowl, combine refried beans and salsa. Cover and microwave 1-2 minutes or until spreadable.
3. Place corn-flour tortillas in a greased 13 x 9 pan.
4. Spread the refried bean mixture on the tortillas. Top with cheese. Layer with half the beef, corn and cheese; repeat layers (as needed).
5. Bake, uncovered, until cheese is melted, 25-40 minutes. Let stand 5 minutes. If desired, serve with cilantro, tomatoes, and sour cream.

That looks so good
Is it just 1/2 cup salsa total? It says to layer salsa and also mix it with refried beans. That doesn’t seem like much salsa for all of that.
